Mini Burritos


  • 1 Med. Onion Chopped
  • 1 Bunch Cilantro Chopped
  • 16 Oz. Monteray Jack Cheese Grated
  • 12 6-Inch Corn Tortillas (Flour is OK, but corn tastes much better)
  • 2 Skinless Chicken Breasts
  • Whatever you want to cook the chicken in
  • Vegetable Oil
  • Serving Fixins’ for the Mini Burritos (Salsa, sour cream, ect...)


  1. Fully Cook the chicken however you want
  2. While the chicken is cooking, prep your ingredients
  3. Fry the tortillas in oil until golden brown on each side.
  4. Cook the onions in the same skillet fully.
  5. Pull the chicken apart with your hands until it is fully shredded. (This part is fun)
  6. Make yourself a nice prep station like in the picture.
  7. Layer cheese, chicken, onions and cilantro, making sure you can still tightly roll the tortilla. Leave enough cheese to sprinkle on top.
  8. Bake at 400F for 10 Mins. or until cheese is nice and brown. Serve ‘em up and enjoy!
