• 1 Tbsp. Vegtable Oil
  • 1 C. Grated Carrots
  • 1 Finely Chopped Medium Onion
  • 4 Minced Garlic Cloves
  • 2 Eggs
  • 3 tbsp. Ketchup
  • 1 Tbsp. Worcestershire Sauce
  • 1/2 Tsp. Salt
  • 1 C. Bread Crumbs
  • 2 Lb. 90% Lean Ground Beef
  • 12 Oz. Apricot Preserves
  • 1 Tbsp. Honey

  1. Combine oil, carrots (I know, but they don’t add any flavor) onion, garlic, eggs, ketchup, salt, and Worcestershire sauce in a large bowl.
  2. This is the fun part! Add the meat to the bowl, mix in evenly with your bare hands. That’s right. Mix that meat.
  3. Wash your hands thoroughly.
  4. Combine the honey and apricot preserves.
  5. Spread the meat evenly in a pan of your choice. I halved the meat and put it in a bread loaf pan, then covered up the other half.
  6. spread the apricot glaze evenly on top.
  7. Bake at 375F until the meat is fully cooked in the center. (We don’t want any medium-rare meatloaf!)
